Instructions

Step 1
Preheat oven to 375°F. Lightly grease an 8x8-inch baking dish.
Step 2
Warm tortillas in a dry skillet over medium heat until softened.

Sprinkle cheese on one-half of each tortilla. Top with broccoli, cauliflower, onion, salsa, and enchilada sauce.

Roll up the tortillas and place seam-side down in the prepared baking dish.
