Instructions
Step 1
Add butter to pan and melt over medium heat. Add shallots and capers. Sauté for 2 minutes. Stir in lemon juice and parsley. Set aside.
Step 2
Pat sea scallops dry with paper towel, then season scallops with salt and pepper. Heat sauté pan over medium heat then add oil to pan. After 1 minute, add sea scallops.
Step 3
Sauté until browned, about 2 minutes per side. Transfer sea scallops to serving dish. Cover with foil to keep warm.
Step 4
Serve with butter sauce. Makes 4 servings.
