Instructions
Step 1
Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened about 5 minutes.
Step 2
Add garlic and cook for 1 minute, stirring constantly.
Step 3
Add ground beef and cook until browned, breaking it up with a spoon.
Step 4
Stir in cumin, coriander, and smoked paprika and cook for 30 seconds until fragrant.
Step 5
Add diced tomatoes, vegetable broth, chickpeas, celery, and carrots. Bring to a simmer and cook for 15 minutes, or until vegetables are tender.
Step 6
Season with salt and pepper to taste.
Step 7
Serve hot, garnished with chopped parsley (optional).
