Instructions
Step 1
Butterfly each chicken breast. Pat dry with paper towels.
Step 2
Pound with meat mallet so that the thickness is uniform for each breast.
Step 3
Sprinkle salt, pepper, paprika, and oregano on each breast. Rub well.
Step 4
Place 2 slices of cheese on one side of each breast.
Step 5
Place 2 slices of tomato on top of each cheese slice.
Step 6
Fold (close) each breast.
Step 7
Cut slits in the top of each breast.
Step 8
Sprinkle salt, pepper, and oregano on top of each breast.
Step 9
Add olive oil to the top of each breast and combine spices and oil well.
Step 10
Heat a cast pan to a medium high heat.
Step 11
Add olive oil to coat the bottom
Step 12
Place chicken breasts in the pan and cover. Cook for about 6-8 minutes.
Step 13
Turn chicken over and cook covered for an additional 6-8 minutes.
Step 14
Turn chicken over in the pan. If cooked through , add additional cheese on top. Cover. Serve when cheese is melted
