Instructions
Step 1
Heat the oven to 180C
Step 2
Place the boursin in the centre of an oven proof casserole dish with lid, or just use foil if you want to use one without a lid.
Step 3
Place the chopped onion in the dish around the cheese and drizzle over the oil from the sundried tomato jar.
Step 4
Add the sundried tomatoes followed by the risotto rice. Season with salt and pepper
Step 5
Heat the stock on the hob or in microwave until boiling furiously. Pour over the rice, give it a quick stir before covering immediately with lid or tight foil and placing in the oven.
Step 6
Bake for 25 minutes. Remove from the oven and quickly stir the melted cheese into the stock and rice, before placing the lid back on and returning to the oven for 10 minutes.
Step 7
Remove from the oven, stir in the spinach and replace the lid. Leave to rest for 5-10 minutes, or until the rice is cooked through and the spinach is wilted.
Step 8
Serve with rocket and a few chilli flakes
