Cheesy Vegan Veggie Risotto

Risotto is an all time fave dish of mine. This particualr risotto recipe is packed with so many vegetables which makes it perfect for a week night dinner!

Step 1
Bring a pot to medium heat with the olive oil then fry the shallots for 3 - 4 minutes with a pinch of salt. Add the garlic, carrots and mushrooms and fry for another 3 - 4 minutes, stirring occasionally.
Step 2
Add the rice to the pot and mix well to ensure all of the rice is covered in olive oil.
Step 3
Begin adding 1 ladle of stock at a time, when all the liquid is absorbed, add another ladle and repeat until you are out of stock and the rice is well cooked. This will take around 20 - 30 minutes.
Step 4
Once the rice is cooked add in the nutritional yeast and a decent pinch of pepper and stir well, turn off the heat then fold in the spinach until wilted and then stir through the butter
Step 5
Serve in a bowl with fresh parsley and enjoy!
