Mango, jalapeño & lime summer glow salad
One of my favourite salads to date, full of glow-giving goodness and packed with flavour. Everything you want to eat and so simple to make. Roast your chickpeas with a coating of cornflour and spices until golden and crisp. the dressing uses jalapeño brine for a subtle warmth and flavour which is just heaven. Toss everything together and serve.

To serve 2 you will need
200g mango, diced
1 medium avocado, diced
1/4 cucumber, deseeded and diced
1/4 red onion, thinly sliced
150g pack of cooked prawns (or make this veggie by using tofu!)
1 tin chickpeas, drained
1 tsp cornflour, 1 tsp garlic powder, 1 tsp smoked paprika
2 large handfuls of either chopped coriander or parsley for those who hate it
Dressing
2 tbsp jalapeño brine (liquid from the jar)
Juice of one lime
1 tsp honey
1 level tsp Dijon mustard
Salt to taste
1. Toss the chickpeas in the cornflour, garlic, smoked paprika and season with salt. Drizzle in a little olive oil and stir to combine. Roast at 210c fan (205 in the air fryer) for 15-20 minutes until crisp.
2. Whilst the chickpeas are roasting prep the dressing, mixing together the ingredients above and adjusting to taste, adding more honey or lime juice to your preference.
3. Mix together all the salad base ingredients, tip in the crispy chickpeas and our in the dressing. Toss to combine and serve.
