6 ouncesground lamb
¼ cuponion
finely chopped
1 tablespoonfresh parsley
finely chopped
1 teaspoonground cumin
½ teaspoonground coriander
¼ teaspoongarlic powder
¼ teaspoonsalt
¼ teaspoonblack pepper
1 tablespoonolive oil
1zucchini
medium, halved and thinly sliced
0.5red bell pepper
thinly sliced
¼ cupcherry tomatoes
1 sprigfresh rosemary
Instructions
Step 1
Preheat oven to 400°F (200°C).
Step 2
In a large bowl, combine ground lamb, onion, parsley, cumin, coriander, garlic powder, salt, and pepper. Mix well to combine.
Step 3
Form the lamb mixture into small meatballs, about 1 inch in diameter.
Step 4
Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes.

Transfer the meatballs to a baking sheet.
Step 6
Arrange the zucchini, bell pepper, and cherry tomatoes around the meatballs.
Step 7
Place the rosemary sprig on top of the vegetables.

Roast in the preheated oven for 15-20 minutes, or until the meatballs are cooked through and the vegetables are tender.

Serve immediately, garnished with additional fresh parsley, if desired.
