Instructions
Step 1
1. In a large bowl, season the flour with salt and pepper. Dredge the beef cubes in the seasoned flour.
Step 2
2. In a large pot, heat the olive oil over medium-high heat. Brown the beef cubes in batches until well-seared. Transfer the browned beef to a plate.
Step 3
3. Add the chopped onion and minced garlic to the pot, and sauté until fragrant. Return the beef to the pot.
Step 4
4. Pour in the red wine and beef broth. Bring to a simmer, then cover and cook over low heat for 2 hours, stirring occasionally.
Step 5
5. In a separate pot, boil the baby potatoes until fork-tender. Drain and mash with butter, milk, and minced garlic to make creamy garlic mashed potatoes.
Step 6
6. Preheat the oven to 400°F. Toss the trimmed green beans with olive oil, balsamic vinegar, salt, and pepper. Roast for 15-20 minutes until tender and slightly caramelized.
Step 7
7. Add the sliced carrots and pearl onions to the beef stew, and cook for an additional 30 minutes, until the vegetables are tender and the beef is fork-tender.
Step 8
8. Serve the beef bourguignon with garlic mashed potatoes and roasted green beans. Enjoy!
