Instructions

Step 1
In a large pot boil 5 cups of water
Step 2
Add 12oz box of chickpea rotini and cook, uncovered, stirring occasionally for 4-6 minutes or until al dente. Do not overcook
Step 3
Rinse noodles with cold water and drain well
Step 4
Once rinsed, in a large bowl combine veggies with pasta.
Step 5
Mix together all ingredients for the vinaigrette, then add to the pasta and veggies.
Step 6
For additonal veggies, add diced cucumber or black olives.
Step 7
Chill before serving
