Barley salad is always a perfect solution for a healthy lunch. You can prepeare it a day before and have it ready for your office lunch or a picnic. This version is with broccoli, tomato, pesto and walnuts.

Instructions
Step 1
Clean the broccoli and slice them roughly.

Step 2
Boil the barley in salty water according to its package. 5 munutes before the barley is done, put the broccoli into the boiling water too. Once this time is passed, put both in a strainer and cool under fresh water.

Step 3
In a large bowl put the barley and the broccoli since now they are cold, add some tomatoes, crushed walnuts and the pesto. Mix delicately for a minute.

Cover the bowl with plastic wrap and leave it in the fridge at least two hours befor serving.
