Shakshuka

This recipe is great for when you cook for yourself or when you want to spend some time in the kitchen at night. You can also just increase the portions for a group size dish.

Instructions

Step 1
Heat oil in a pan. In the meantime, chop the onion and pepper and mince the garlic.
Step 2
Add the onion and garlic and fry until the onion is golden.
Step 3
Add the pepper and keep frying for 10 more minutes.
Step 4
Add the crushed tomatoes and tomato paste. Season to taste and mix well, then cook for about 20 minutes, or untill you reach desired consistency.
Step 5
Add olives and a splash of lemon juice and keep cooking for a couple minutes more.
Step 6
Make two holes and drop the eggs straight in them. Top everything with cheese and cook with the lead on for about 10 minutes.
Step 7
You can top with more cheese and fresh basil to serve. Enjoy!
