Step 1
Cut potatoes skin on into bite sized pieces, drizzle with olive oil and season with salt and pepper

Peel and chop veg

Air fryer potatoes for 15 minutes
Step 4
Mix grated cheese with panko breadcrumbs and a drizzle of olive oil. Pat fish dry and place in air fryer. Spoon mixture on top to coat

Air fryer fish for 10 minutes

Heat a wide based frying pan and add veg. Cook for 2-3 mins until soft

Add cherry tomatoes and cook for 4 more mins

Boil kettle and make veg stock. Add into veg, mix in tomato puree and season with salt and pepper
