Ingredients

1kgboneless leg of lamb
½ cupwater
for the marinade if using instant coffee
1 ½ tablespoonsinstant coffee powder
OR 1/2 cup brewed strong coffee, cooled
1 teaspoonground cumin
1 teaspoonground coriander
1 teaspoonground cinnamon
1 teaspoonground ginger
salt
to taste
pepper
to taste
1onion
large, sliced into thick rounds
¼ cupmixed fruit and nut blend
750gpotatoes
peeled and cut into chunks
375gsweet potatoes
peeled and cut into chunks
375gKent pumpkin
peeled and cut into chunks
375gcarrots
peeled and cut into chunks
For the sauce:
Instructions
Step 1
Preheat your oven to 180°C (350°F).
Step 2
In a bowl, dissolve the instant coffee powder in the water if using instant coffee. If using brewed coffee, skip this step.
Step 3
Season the lamb with salt, pepper, cumin, coriander, cinnamon, and ginger. Place it in a large dish. Pour the coffee mixture over the lamb, ensuring it's evenly coated. Cover and let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
Step 4
Place the sliced onion in the bottom of a roasting pan.
Step 5
Place the lamb on top of the onions in the roasting pan. Pour any remaining marinade over the lamb.
Step 6
Roast the lamb in the preheated oven for:
Medium-rare, 20 minutes per 500g
Medium, 25 minutes per 500g
Well done, 30 minutes per 500g
or until the lamb reaches your desired doneness.
Step 7
About halfway through the cooking time, sprinkle the mixed fruit and nut blend around the lamb in the roasting pan.
Step 8
About 30 minutes before the lamb is done, add the potatoes, sweet potatoes, pumpkin, and carrots to the oven to roast.
Step 9
Continue roasting until the lamb and vegetables are tender and golden brown (the vegetables can continue to cook during the resting time).
Step 10
Remove the lamb and vegetables from the oven and let them rest for 10-15 minutes while you make the sauce.
Step 11
While the lamb is resting, place the roasting pan with the pan drippings and fruit nut mix on the stove over medium heat. Add the cream to the pan and stir to combine. Let it simmer for a few minutes to create a rich, flavorful sauce.
Step 12
Serve the lamb and vegetables with the fruit and nut sauce, garnished.
