Instructions

Step 1
In an instant pot add a tbs of oil, can of chipotles in adobo sauce, cumin salt and pepper. Add your chicken breasts (used two for this). Pressure cook on high for 15 mins, quick release after 5 mins. Pre make your rice a head of time or start making your rice now.
Step 2
In a skillet melt butter add corn (canned or frozen bagged even fresh) cook with garlic until hot
Step 3
Dice onion, bell peppers, and tomato, add to a bowl, add cooked corn. Combine, add garlic powder, salt, pepper, and lime juice to taste. Rinse black beans add to a separate bowl.
Step 4
Make your pico de Gallo and guacamole to your taste.
Step 5
Build your bowl.
