Mini Egg Bites
These egg bites are packed with protein and can be so versatile. Ham + Cheese is one of our favs but you can do whatever toppings you like! The perfect meal prep/breakfast for my 11 month old :)

Instructions
Step 1
Preheat oven to 350F and spray a mini muffin pan with oil
Step 2
Add eggs, cottage, shredded cheese and salt and pepper to a blender and blend until smooth.
Step 3
Mix in ham and spinach
Step 4
Pour the egg mixture into each muffin cup, about 3/4 full.
Step 5
Bake for 12-15 minutes and enjoy!
Step 6
Can be kept in the fridge for 3-5 days. Just reheat in the microwave for 30-45 seconds.
