Chicken Nugget Chunks

Crispy tender nuggets made without any special kitchen tools or equipment. Perfect solo as a snack or dinner entrée. Cook time varies based on serving size (how many batches of nuggets you will have to fry), and the spices are easy to substitute for a spice mix that suits your taste and flavor pallet.

Step 1
In a medium or large bowl, combine water, pickle juice, chopped chicken, and pickle spear. Cover and leave in fridge to marinate for 2-3 hours.

Step 2
In a medium or large bowl, combine ingredients for breading. Mix together until all spices appear evenly distributed in flour. (If done while chicken is marinating, cover and set aside in a dry room temperature area.)

In a small or medium bowl, combine egg and milk. Stir/whisk together until blended together evenly. (If done while chicken is marinating, cover and place in fridge.)

In a cooking pot, add your choice of cooking oil to fill up to between 1/3 and 1/2 of the pot. Place on stove top and turn on burner to medium/high (whatever you are comfortable with, this will only effect how long it will take for the oil to be hot enough to fry the chicken nugget chunks) and leave until oil is ready to fry. This normally takes 10-15 minutes, depending on your heat level. You may also test this by making a test nugget chunk and putting it in the oil.

After your chicken is done marinating, take out the breading and egg wash you placed aside (if you made them ahead of time) or assemble together before taking out your chicken. Place all three bowls next to each other and prepare your space to start frying. Have a plate ready to place cooked nugget chunks on (I put a paper towel on top of the plate to help absorb any leftover oil from frying).

One at a time, take the chicken nugget chunks out of the marinade and place in the breading bowl. Coat in breading mixture, move to egg wash bowl and coat with egg wash, and move back to breading bowl and coat with breading mixture. Continue until all nugget chunks are coated. As you finish this portion, you may either put completed nugget chunks on a rack or plate until you are ready to fry. You may use tongs, a fork, or your hands (bare and washed or gloved) to complete this process. NOTE: Do NOT touch anything other than the above mixtures or cooking equipment if you use your hands (washed and bare or gloved) until you wash your hands/remove gloves as this may cause issues with contamination or food borne illnesses (raw chicken and egg is present).

Begin placing coated nugget chunks into cooking oil to fry and leave in for a minimum of 5-7 minutes (adjust time if you have larger nugget chunks or if there is any pink present when cutting open a tester nugget chunk). Remove with tongs and place on clean plate. Note: You may measure the temperature of the nugget chunks with a thermometer and follow the scale for poultry when you believe they are done frying.

After all nugget chunks have been fried, let them cool and serve. Any sauces or spice toppings may be added at this point.
