Instructions

Step 1
Cut each chicken breast into eight pieces in place on 8 inch stainless steel screws. Marinate and vinaigrette, covered, in refrigerator, at least four hours. Remove skewers from marinade and roll in breadcrumbs, without packing or over breading. Broil into cooked thoroughly.
Step 2
Small skillet heat lemon butter sauce add mushrooms to sauce until cooked thoroughly.
Step 3
Preheat oven to 350°. Place baking dish and remove skewers. Tap with cheese, heat and preheated oven until cheese melts.
Step 4
To serve, top spiedini evenly with mushrooms and sauce, garnished with parsley.

White Wine-lemon-butter sauce

Step 5
Bring lemon juice and white wine to a boil over medium heat continue to heat stirring often until reduced by 1/3. Add heavy whipping cream. Simmer 3 to 4 minutes until mixture thickens. Slowly add one cup butter until completely incorporated. Season with salt, pepper, granulated garlic, a dash of pepper sauce, and dried parsley to taste.
