Instructions

Step 1
Heat the ghee in a saucepan over a medium heat. When hot, add the ground cardamom and semolina and cook, stirring constantly for 5–6 minutes, or until the semolina is aromatic and infuses with the cardamom.
Step 2
Stir in the sugar, then pour in the milk and add the nuts and raisins. Stir vigorously to prevent the mixture from sticking to the base of the pan. The semolina will puff up and come together and become very thick. Add a little more milk if it is too firm.
Step 3
Stir the mixture for a further 3 minutes then turn off the heat and pour the semolina into a serving dish or individual moulds. Stir in the rose water and leave to set for a few minutes. Serve warm or at room temperature decorated with a sprinkling of rose petals and nuts.
