Step 1
Begin by thoroughly washing the lamb's lettuce under cold running water. Gently pat it dry using paper towels or a clean kitchen towel. Slice the Galia and Cantaloupe melons in half, and scoop out the seeds using a spoon. Then, slice the melon halves into thin wedges or cubes, as desired. Cut the nectarines in half, remove the pits, and slice them into wedges or thin slices. Finely chop the basil leaves instead of tearing them, ensuring they are finely chopped for optimal flavor distribution throughout the salad. Tear the balls of burrata into bite-sized chunks, being careful not to crush them too much. Finally, thinly slice the red onion. You can use a sharp knife or a mandoline slicer for thin, even slices. Measure out the roasted and salted almonds and chop them finely.

Preheat a grill pan or outdoor grill over medium-high heat. Lightly brush the nectarine wedges with a bit of olive oil to prevent sticking. Grill the nectarine wedges for 1-2 minutes on each side until they have grill marks and begin to caramelize slightly. Once grilled, remove them from the grill and set them aside.
