Step 1
Pre-heat oven to 400. Cook pie crust 8-9". Prick bottom of crust and back 2-3" more. Turn oven down the 375 and raise rack.
Step 2
Bring water and butter to boil, add leeks and boil till water nearly gone. Turn way down, cover, and stew till soft 20 - 30".
Step 3
Beat eggs, cream, and spices to blend. Blend in the leeks. Pour into crust. Spread the cheese and dot with the butter. Cook at 375 on upper rack for 25-30"
