Tuscan shrimp and gnocchi

This is a healthier recipe that is still decadent. I use gnocchi, but that could be substituted for something else (like tortellini) or left out completely. Chicken is a delicious substitute for the shrimp as well.

Instructions

Step 1
Add 1 tbsp butter and 1 tsp flour to large skillet on medium heat and stir untiil smooth
Step 2
Add half and half, boulion, sun dried tomatoes, Italian seasoning and garlic. Bring to a simmer
Step 3
Add lemom zest and juice. Season to taste with pepper flakes, black pepper and salt. Simmer for 2-3 minutes on med-low
Step 4
Add gnocchi and raw shrimp. Cook 3-4 minutes on a low simmer.
Step 5
Add chopped basil and spinach. Stir well and cook additional 2 minutes on low. Top with feta and serve
