Ingredients

1 bagPersian Cucumbers
16 ozcherry tomatoes
1 bunchparsley
16 ozmini mozzarella balls
1 containersalami
1can chickpeas
1can white beans
0.5 jarKalamata olives
0.5 jarpeperoncinis
1 cupgrated parmesan cheese
Dressing
Instructions
Step 1
Dice cucks, tomatoes, parsley, and salami toss in a large bowl, slice olives
Step 2
toss in drained mozzarella balls, grated parm,
Step 3
Rinse and drain beans and add to bowl
Step 4
in a seperate container add olive oil, red wine vinegar, garlic, lemon juice, mustard, and seasonings. Using a milk frother, whip together until creamy.
Step 5
Pour dressing over the salad and toss well to coat
Step 6
This keeps well in the refrigerator for about a week, the dressing just needs to be tossed each time it's served
