Instructions

Step 1
1 Heat the olive oil in a large heavy-based frying pan.
Step 2
Sauté the onion, capsicum, zucchini and garlic until soft. Add the fennel seeds and stir for 1 minute.
Step 3
2 Stir in the tomato paste, then add the sausage meat and stir to break up any lumps. Cook for 5 minutes until the meat is brown. Add the lentils, chilli flakes, tomatoes and 250 ml (9 fl oz/½ cup) of water. Lower the heat and simmer for 25 minutes.
Step 4
3 Meanwhile, cook the pasta according to the packet directions and drain. Divide into bowls, top with the meat sauce and scatter with grated parmesan.
