Instructions

Step 1
In a medium bowl, combine yogurt, lemon juice, garam masala, turmeric, and cumin. Season to taste with salt. Add the chicken thighs, coating them completely. Cover and marinate overnight in fridge.
Step 2
For the butter sauce, melt half the butter in a skillet over medium heat. Add the garlic and ginger (and chili powder, if using), and stir for about 1 minute to prevent the spices from burning.
Step 3
Add the chicken and marinade the tomatoes (or tomato paste) and season with salt and pepper. Pour in the bone broth and simmer for 30-35 minutes until the chicken is fully cooked.
Step 4
Stir in the remaining butter and heavy cream and simmer for another 5 minutes.
Step 5
Ladle the butter chicken into a bowl and garnish with cilantro
