Instructions

Step 1
In a microwaveable mug, whisk egg, almond flour, baking powder, salt, and flaxseeds. Microwave on high for 90 seconds.
Step 2
Line a plate with paper towels. In a skillet over medium-high heat, fry bacon, if using, until the fat renders. Using a slotted spoon, transfer the bacon bits to the plate to drain. Set aside the skillet with the bacon fat.
Step 3
In a medium bowl, lightly beat egg, cinnamon, vanilla extract, and the splash of heavy cream.
Step 4
Return the skillet to medium heat, and add butter if using instead of bacon. Dip bread slices in the egg mixture, coating both sides, and fry in the bacon fat (or butter) for 2 minutes. Turn the slices over and cook for another minute.
Step 5
Transfer the cooked French toast to a plate, top with whipped cream, berries, pecans and the reserved bacon bits.
