Sultar Prize Winning Chili Con Carne
My beloved husband, Paul and I developed this recipe to submit to our Moose Lodge’s Chili Cookoff. It won second prize only because one of the judges hates cinnamon. I hate chili as I don’t like beans, but I love this chili. I pick out the beans though.

Ingredients

0.5 tbspschili powder
0.5 tbspssmoked paprika
0.5 tbspsgarlic powder
0.5 tbspsonion powder
0.5 tbspsground cumin
1 tspcoriander
0.5 tspscinnamon
2 tbspsolive oil
3 lbschuck roast
cut into 1” cubes

1 lbItalian sausage

28 ozcan crushed tomatoes
6 cupslow sodium beef broth
1 bottlelager beer
2 x 14 ozcans red kidney beans
3 tbspscornstarch
4 tbspsWater
1can black beans
Instructions
Step 1
Rinse and drain black beans and kidney beans.

Combine all spices except salt and pepper in a small bowl, mixing well with a spoon to combine. Set aside.

Brown cubed chuck roast in a little olive oil in a large Dutch oven or a big heavy soup pot after sprinkling meat with salt and pepper. Brown meat on all sides, then remove meat from Dutch oven or soup pot and put into large crockpot. Put lid on crockpot.

Add some olive oil to Dutch oven or soup pot. Sauté onions. Stir in diced bell peppers. Cook for about 3 mins. Season with some of the set aside seasoning mix. Cook for for about 1 min to release the fragrance of the spices and then stir in the crushed tomatoes. Cook for 1 more min.

Add vegetables to meat in the crock pot. Stir to combine. Pour in beef broth and beer. Add in remaining spice mix. Stir to combine.

Add more oil to the Dutch oven or soup pot. Season the ground beef with salt and pepper, onion powder and garlic powder. Mix to combine. Brown the beef. Drain the grease from the ground beef then add to the crockpot. Stir to combine.

Add more oil to the Dutch oven or soup pot and brown the diced Italian sausage. Drain the grease. Add sausage to the crockpot and stir to combine.

Set crockpot on LOW for 8 hours. In a small bowl, whisk water and cornstarch together. Pour into crockpot and mix in with a spoon.

MSS NOTE: I seem to remember that we actually ended up cooking the chili for 3 days to get it to our desired thickness, so be prepared and remember chili gets better as it ages.
Step 10
Serve with lots of shredded cheddar cheese and oyster crackers. If you have beer drinkers, serve beer with this meal, otherwise beverages if your choice. I drink Coca Cola with it. For variety, you could serve nacho chips or corn chips instead of oyster crackers.
