Instructions
Step 1
Peal and finely chop or grate your garlic and boil a kettle.
Step 2
Add most of the chopped garlic (you will use the rest later) your ground smoked paprika, cayenne pepper (can't handle the heat? Go easy) and dried oregano to a large bowl.
Step 3
Add a pinch of salt and pepper and 1 tbs of vegetable oil and give it a good mix-up - this is your spicy marinade.
Step 4
Drain your jumbo prawns, then add them to the spicy marinade and gently mix together until the prawns s are fully coated - these are your marinated prawns. Set aside for later.
Step 5
Whilst the prawns are marinating, rinse your quinoa in a sieve under cold running water.
Step 6
Add the quinoa to a pot with plenty of boiling water and bring to the boil over a high heat.
Step 7
Once boiling, reduce the heat to a medium and cook for 6-8 min or until all the quinoa is tender.
Step 8
Once cooked, drain and return it to the pot until serving.
Step 9
Mean while roughly chop you cherry tomatoes
Step 10
Wash and shred your lettuce, then pat dry with a kitchen paper.
Step 11
Cut your advocados in half length ways, remove the stone using a teaspoon, scoop the avocado out of the skin using a spoon and slice it finely lengthways.
Step 12
Add ot all to a bowel and give it a gentle mix-up thus is your salad.
Step 13
Cop your coriander finely, including the stalks.
Step 14
Cut your lime in half.
Step 15
Add the chopped coriander, remaining garlic, natural yogurt, and the juice of half a lime to a food processor.
Step 16
Add a pinch of salt and blitz until smooth - this is your lime and coriander yogurt.
Step 17
TIP Don't have a food processor? chop the coriander and garlic as finely as you can, then mix it all together in a small bowl.
Step 18
Heat a large, dry, wide-based pan (preferably non-stick) over a high heat.
Step 19
Once hot, add the marinated prawns and cook for 6-7 minutes or until the prawns are cooked through - these are your spicy jumbo prawns.
Step 20
Chop the remaining lime into 1 wedge per person.
Step 21
Add a pinch of salt to the cooked quinoa and give it a good mix up.
Step 22
Serve the spicy jumbo king prawns with the quinoa and salad.
Step 23
Drizzle the lime and coriander yoghurt all over and garnish with a lime wedge.
