Step 1
Cook down Onion, celery, and bell pepper mix in a little oil on medium heat. Add Pork Tasso to onion mix and cook about 5 minutes on medium heat. Combine roux mix to 1 cup of water and add to pot. Combine Au Jus to 1 cup of water and add to pot. Add bay leaves, celery seed, minced garlic and Tony’s (to taste) to pot. Add Rotel to pot keeping liquid from 2 cans. Simmer until thickened some. Add Crawfish tails to simmer for 10-15 minutes. Add tomato paste is you want a thicker gravy. Cook Rice.
