Instructions

Step 1
Make dry rub out of the dried ingredients, coat the brisket.
Step 2
Put it in a ziploc bag and squeeze all the air out. Seal and marinate for at least 24 hours.
Step 3
Smoke for 30 mins (or longer) at 275 F while spraying the meat with the beer to keep the meat damp.
Step 4
Wrap the brisket in two layers of foil and seal well with a full cup of beer under the foil.
Step 5
Continue cooking until internal temp is 200F. Keep cooking juices for a gravy.
