Ingredients

75ghalloumi
cut into 3cm thick slices
0.5little gem lettuce
0.5avocado
sliced
0.5tomato
sliced
1 Tbspbasil pesto
Hot Honey Marinade
Instructions
Step 1
Mix marinade ingredients in a small bowl. Place halloumi slices into the bowl, covering with the marinade. Set aside while you prepare the other elements.
Step 2
In frying pan, heat a splash of olive oil. Cook the marinated halloumi slices on each side for 2 to 3 minutes or until golden brown.
Step 3
Spread pesto on one of the bread slices. Place lettuce leaves onto the slice, then the avocado and tomato.
Step 4
Place halloumi on top, then the other bread slice. Cut sandwich in half and serve.
