Cold-pressed olive oil

4tilapia fillets
or fish of choice

Instructions
Step 1
Coat bottom of 13x9 baking dish with a small amount of olive oil and 2 teaspoons lemon juice. Lightly sprinkle salt and garlic powder. Place 4 fish fillets upside-down in pan, then flip so that both sides are evenly coated. Arrange fillets evenly across the pan and set oven on Broil.
Step 2
Mix sauce ingredients in bowl, taste test if desired (should be zesty and creamy, but you can always adjust as desired), Pour over top of fish. Aim to cover the fillets, and if there is enough sauce, spread it around so that all sides of fish are covered.
Step 3
Broil for 10-15 minutes or until sauce begins to brown on top. Your fish should be fully cooked and flaky, but it's always safest to test with a meat thermometer. Enjoy!
Step 4
Optional toppings: Chop up 2 Tbsp of butter and scatter after sauce is spread so that it can melt down into the fillets. Sprinkle Parmesan cheese over the sauce (or in the sauce) for cheesy goodness.
