Instructions
Step 1
Slice chicken breast into 2cm thick pieces.
Step 2
Pierce chicken surface with a fork, season with salt and pepper.
Step 3
Coat chicken with flour in a bowl.
Step 4
Add mayonnaise and mix to cover chicken. Set aside.
Step 5
Brown panko breadcrumbs in a dry pan over medium heat. Transfer to a plate.
Step 6
Preheat oven to 220°C (428°F).
Step 7
Once breadcrumbs cool, coat chicken generously.
Step 8
Grease a wire rack and place over a baking tray.
Step 9
Arrange chicken on rack.
Step 10
Bake on bottom shelf for 10 minutes, flip, then bake 15 more minutes.
Step 11
Meanwhile, mix sauce ingredients in a small bowl.
Step 12
Serve chicken immediately with sauce for drizzling or dipping.
