Starbucks Copycat egg bites.
Store in fridge about 3 days. Heat about 30 seconds in microwave.
Store in freezer about 2 months. Defrost overnight in fridge.

Preheat oven to 350°

Put eggs, cottage cheese, shredded cheese, and seasonings into your blender. Blend until combined and foamy.

Grease muffin tin, if you have any bacon grease use it.

Pour egg mixture into muffin pan, try and pour even amounts, each muffin well will about 3/4 full.

Top each muffin well with chopped bacon.

Optionally, add an oven safe bowl half full of water to your oven, on the rack below or beside where your muffin pan will be. This step is not necessary but will get the texture of the egg bites closer to the texture of Starbucks egg bites. Simply omit if you please.
