Instructions

Step 1
Add almond milk, coconut oil, and ½ tsp. stevia to a large bowl; whisk to combine. Add yeast; let sit for 5 minutes.
Step 2
Add ¾ cup whole wheat flour and coconut flour; stir to combine. Cover with plastic wrap. Set in a warm spot to rise for 1 hour or until doubled.
Step 3
When dough has finished rising, preheat oven to 350° F (180 °C). Lightly coat a 9-inch (23-cm) cake pan with spray.
Step 4
Add applesauce, brown sugar, and cinnamon to a small mixing bowl; stir to combine. Set aside.
Step 5
Add remaining ½ cup flour, baking powder, and salt to dough; stir to combine. Turn dough out onto a lightly floured work surface. Knead dough just until it is no longer sticky.
Step 6
Roll out dough into a large rectangle, approximately 14 x 10 inches (35 x 25 cm). Spread applesauce mixture evenly over dough, all the way to edges.
Step 7
Roll dough into a large log, starting from the 10-inch (25-cm) side. Slice into 5 equal pieces, approx. 2 inches (5 cm) each. Place in prepared pan, cut-side up, leaving space between rolls.
Step 8
Bake for 25 minutes.
Step 9
While rolls bake, add cream cheese, extract, and stevia to a food processor; cover. Blend until very smooth.
Step 10
When cinnamon rolls finish baking, remove from oven. Let cool in pan for 15 minutes. Spread evenly with frosting. Dust with cinnamon. Enjoy!
