I was doing a collab with Armanino and made this delicious butternut squash pasta sauce that I have to share with you! This Butternut Squash Pasta Sauce is rich, creamy, and full of cozy fall flavors and this velvety sauce pairs perfectly with your favorite pasta. Instructions

Step 1
Preheat oven to 350 degrees.
Step 2
On a large baking sheet, spread your cubed butternut squash across the sheet. Season with olive oil, chili flakes, garlic powder, oregano, salt and pepper.

Bake for 30 minutes or until the butternut squash is nice and soft.
Step 4
Once done, remove and let slightly cool. Then place in a food processor. Add in the garlic sauce and parmesan cheese, then puree until smooth.

Cook your pasta to your desired doneness. Save 1 cup of the pasta water, which we will mix with the sauce.

Add 2 tbsp butter to a pan on medium heat. Add some sage and crisp slightly (should take 30 seconds - 1 min max).

Remove the sage from the pan and add 1 more tbsp of butter. Add in your chopped sage and chopped rosemary and cook for 30 seconds.

Add your butternut squash mixture to the pan. Slowly add some pasta water, stirring into the sauce until you reach your desired thickness. Add a little parmesan cheese at the end.

Plate your pasta and pour over your sauce mixture. You can also alternatively toss your pasta in the sauce too. Sprinkle a little parmesan cheese over everything and top with a few pieces of crispy sage. Enjoy!
