Instructions

Sushi Rice

Step 1
Prepare the rice with the water according to the packet instructions. Then leave to cool completely.
Step 2
As soon as the rice has cooled, add the rice vinegar, salt and sugar and mix lightly.
Step 3
Place the rice on a piece of cling film and shape into a 10-15 cm long rectangle. Place in the freezer for approx. 1 hour.

Teriyaki chicken

Step 4
Season the chicken breast on both sides with salt and pepper.
Step 5
Heat the sunflower oil in a frying pan. Add the chicken and fry for approx. 3 mins. on both sides until lightly golden brown. Remove the chicken from the pan.
Step 6
Reduce the heat to medium and pour in the soy sauce, mirin and rice vinegar. Leave to simmer for 1 min.
Step 7
Finely chop the garlic.
Step 8
Now add the sugar to the sauce and leave to dissolve for another 1 min.
Step 9
Mix the water with the starch and add to the sauce. Stir well so that the teriyaki sauce thickens.
Step 10
Finally, add the garlic and chili flakes.

Crispy rice

Step 11
Cut the rice rectangle in half.
Step 12
Heat the sunflower oil and add a piece of rice. Fry until it is crispy and golden brown.

Sushi sandwich

Step 13
Slice the avocado, spring onion and bell pepper.
Step 14
Place a square of rice on a piece of cling film.
Step 15
Cut the nori sheet into 2 squares the same size as the rice squares.
Step 16
Top the rice square with the nori leaf, Sriracha mayo, peppers, avocado, chicken, sesame seeds and another nori leaf.
Step 17
Finally, place the other rice square on top and wrap the sandwich. Then cut in half and enjoy!
