Ingredients

4 lbground beef
6 ozvegetable oil
⅔ cupflour
2onion
diced
2poblano chili
diced
4 Tbspdiced green chilies from can
smoked
10cloves garlic
minced
2 x 15 ozkidney beans
can, reserve liquid
2 x 15 ozblack beans
can
2 x 15 ozdiced tomatoes
can
6 Tbspchili powder
5 tspsalt
2 Tbspblack pepper
3 tspMexican oregano
4 ½ cupchicken broth
3 cupwater
Instructions
Step 1
Brown beef until almost done in a pan
Step 2
Add chipotle peppers and juice, poblano pepper, garlic and onions and sauté until onions are transparent
Step 3
In a pot, heat oil over medium-high heat. Whisk in flour for 2 ½ minutes or until roux turns tan
Step 4
To the roux, add beef mixture, chili powder, beans, tomatoes, oregano, chicken broth, and water. Salt and pepper to taste.
Step 5
Increase heat to high and bring to a boil, then reduce heat to low and simmer for 2 ½ to 3 ⅓ hours- depending on how thick you want it. Stir making sure the bottom doesn’t burn.
