This makes a dense, highly nutritious bar which can be eaten as a snack or for breakfast. It is calorie-dense and the dried apricots are borderline, so don't be tempted to overdo it. (e.g., ration yourself to 1 square per person).

Instructions

Step 1
In a food processor, using the blade, mix the apricots and walnuts until the texture presents a course consistency.

Add the chocolate chips and the end and mix briefly using the 'pulse' button. The chocolate should still present a course consistency.

Spray an 8x8-inch baking dish with the oil and fill with the mixture.

Bake in a hot over at 340 degrees F (170 degrees C) for about 20 minutes. Check the center for doneness.
Step 6
Allow the dish to cool down. De-mold by flipping it over onto a cutting board. Slice into 16 equal squares.
