Mock Cheese Cake

This conforming cake can be eaten at any time of day--for example at tea time. It makes also a great dessert after dinner. This is a dense dish that is rich in protein, so ration yourself.

Instructions

Step 1
In a small bowl, soak the raisins in hot water for about 10 minutes. Drain, add the rum and mix well. Set aside.

Place the almonds in your blender and grind into flour.

Add the remaining ingredients and blend until you obtain a very creamy texture.

Stir in the raisins.
Step 5
Spray a round, table-ready baking dish (about 9-inch diameter) with the olive oil and fill in the mixture. Alternatively, you can fill the mixture into individual ramekins.

Bake in a hot oven at 340 degrees F (170 degrees C) for about 20 minutes, or until the center of the cake is cooked.
Step 7
Allow the cake to cool down. Serve in the dish.
