Instructions
Step 1
Roast sweet potatoes at 350° for about an hour or until fork tender, then peel and mash
Step 2
Combine 1/2 stick melted butter with cream, vanilla, and whisk in the 2 eggs. Add to potatoes and mix well. Also mix in pumpkin pie seasoning to taste.
Step 3
Put the marshmallow creme in the microwave in 10 sec increments until loosened and easy to spread.
Step 4
Spread half of the sweet potatoes in a greased baking dish. Spread the marshmallow on top, then the rest of the potatoes.
Step 5
Melt the other 1/2 stick butter in a pan over medium heat. Toast the pecans for about 5 minutes.
Step 6
Combine the pecans and butter with the brown sugar, flour, and pumpkin pie seasoning. You want the texture to resemble wet sand. Crumble the mixture on top of the casserole.
Step 7
Bake at 350° for 20-30 minutes or until the top is browned and bubbling.
