These stuffed zucchini are so delicious and easy to make . A great vegetarian option if you are having guests over during the holidays you can also sub vegan cheese to keep it vegan . Enjoy !

Instructions

Step 1
Cut the zucchini in half then use a spoon to scoop out the flesh . Brush them with olive oil then bake at 200 c fan setting 400 f for 10 minutes
Step 2
Chop up the scooped out flesh then squeeze as much liquid out as possible . Fry the onion in some oil until soft then add garlic chili flakes cumin paprika and the flesh of the zucchini and season well with salt and pepper

Step 3
Add diced tomatoes and fry another two minutes then add 1 cup of the cheese and half of the basil chopped up . Fill this into the zucchini then sprinkle the rest of the cheese on top and bake in the oven for 10 more minutes . Once the cheese is melted serve with fresh basil and enjoy .
