Thyme Roasted Carrots with Whipped Maple Ricotta 🥕✨
Part two of my annual Everything But the Turkey series! Thousands of you made these last year and for good reason!
Ingredients:
• 2 bunches of carrots
• 2 tbsp olive oil
• 1 tbsp fresh thyme
• 1 cup ricotta cheese
• 2 tbsp maple syrup
• 1 tbsp lemon juice
• 1/2 cup roasted walnuts
• 1 tbsp hot honey
• salt, to taste
Instructions:
1. Toss carrots with olive oil, salt, and fresh thyme on a baking sheet. Roast at 400° for 25-30 minutes, or until tender.
2. For the whipped ricotta, blend ricotta with maple syrup and lemon juice until smooth.
3. Spread the whipped ricotta on a serving plate and top with roasted carrots.
4. Finish with roasted walnuts and a drizzle of hot honey. Enjoy!
