1 Tbsptomato ketchup

Instructions
Step 1
Make the yakisoba sauce by combining oyster sauce, soy sauce, Worcestershire sauce, ketchup, sake, sugar, black pepper, and sesame oil in a bowl.
Step 2
Heat a frying pan on medium-high. Once hot, add oil and fry the ramen noodles until slightly crispy. Add yakisoba sauce and stir fry until evenly coated. Set aside.
Step 3
In a large frying pan, heat oil on medium-low and wipe excess with kitchen paper.
Step 4
While heating, make crepe batter by whisking cake flour, dashi stock, sugar, and mirin until smooth.
Step 5
Pour 3/4 of the batter into the center of the pan and spread thin with a spoon. Sprinkle bonito flakes over wet batter.
Step 6
Layer green cabbage, fried squid snack, and beansprouts, then drizzle remaining batter on top.
Step 7
Place pork belly slices over everything and cover with lid. Cook for 5 minutes.
Step 8
Meanwhile, make okonomi sauce by mixing Worcestershire sauce, oyster sauce, ketchup, honey, and soy sauce. Set aside.
Step 9
Flip okonomiyaki and cook covered for another 5 minutes until pork is cooked through. Transfer to plate.
Step 10
Whisk egg with salt in a separate bowl. Clean pan, add thin layer of oil, and pour in egg. Swirl to coat pan bottom.
Step 11
When egg is 80% cooked, place cooked yakisoba and okonomiyaki on top (crepe side up).
Step 12
Loosen egg edges with spatula and flip entire dish onto plate so egg is on top.
Step 13
Finish with okonomi sauce, chopped green onions, and optional pasteurized egg yolk.
