Swedish Potato Sausage

This sausage recipe has been handed down through my mom's side of the family. They originated in Hallands län, Sweden, and immigrated to the US in the 1880s. Real casings work better than imitation. Uncooked sausage should be stored in the fridge, covered with water. It also freezes well.

Instructions

Step 1
Grind potatoes, onions, and allspice.
Step 2
Mix in the remaining ingredients and blend well, tearing up chunks of meat
Step 3
Stuff into casings, preferably not imitation.
Step 4
Prick skins with a pin and place in pot, fully submerged in water.
Step 5
Boil for 25 minutes.
