Sesame Soy Glazed Potato Mochi

Instructions

Make the glaze:

Step 1
In a small saucepan, combine water, soy sauce, sugar, and mirin.

Heat over medium heat until the sugar dissolves.

Stir in the cornstarch slurry (1 tsp cornstarch and 1 tsp water mixed) and cook until the glaze thickens.

Remove from heat and stir in roasted sesame oil. Set aside.

Make the potato dough:

Boil the potato cubes in water until fork-tender, about 15 minutes.

Drain and mash the potatoes until smooth.

Gradually mix in the potato starch to form a soft, pliable dough.

Shape the mochi:

Divide the dough into equal-sized portions.

Flatten each piece, place a cube of Mozzarella in the center, and wrap the dough around the cheese, sealing it completely.

Shape into a smooth ball.

Fry the mochi:

Heat frying oil in a skillet over medium heat.

Shallow fry the mochi balls, turning occasionally, until golden and crispy on all sides. Drain on a paper towel-lined plate.

Coat with glaze:

While the mochi is still warm, brush or toss them in the sesame soy glaze.

Finish with nori:

Wrap a strip of nori around each potato mochi and enjoy!
