Instructions

Step 1
Peel and cut potatoes into chunks and boil. (Smaller pieces boil quicker). Remove and strain when cooked.
Step 2
Heat a large saucepan on medium-high. Add the oil, onion, carrot and celery to the pan and cook stirring for approximately 4 - 5 minutes.
Step 3
Add the garlic, mustard and smoked paprika to the vegetables and stir together for 30 seconds then set the vegetable/spice mixture to the side.
Step 4
Add the minced beef to the pan and cook, breaking up the meat using a spatula or the back of a spoon until the meat has changed colour.
Step 5
Add the vegetables back into the pan. Stir the meat and vegetables together then add the tomato puree, light soy sauce, salt and pepper, and combine well. Cook for a few minutes to slightly reduce the liquid.
Step 6
Mash the potatoes, adding a small amount of butter if necessary. Add the minced beef and vegetable mix to the potatoes and combine thoroughly. Sprinkle with spring onion or parsley.
