Beef, Guiness and Stilton Pie

Instructions

Step 1
Into a oiled pan, add 3 Diced onions, with a pinch of garlic, rosemary and Thyme. Sauté until soft and golden.
Step 2
Add sautéed onions into the slow cooker.
Step 3
Sear the 900g of Diced beef in the same pan as the onions, and season with Mustard, pepper and mixed herbs.
Step 4
Once seasoned, add into the slow cooker with a litre of beef stock and one bottle of Guiness Stout.
Step 5
Turn slow cooker on to low and leave for at least 7 hours.
Step 6
Once cooked, add Gravy granules to thicken the sauce. Then, add 100g of Stilton and stir through.
Step 7
Into a greased pie dish, add the roll of Shortcrust pastry and blind bake for 20 minutes at 180°c until golden brown.
Step 8
Remove pastry from the oven and add the mixture from the slow cooker on top of the pastry.
Step 9
Cover the pie with the roll of Puff pastry and egg wash the pie.
Step 10
Put the pie back into the oven at 200°c for 20 minutes or until golden brown.
Step 11
Serve with mashed potatoes, a vegetable of your choice and a thick Gravy.
