Instructions

Step 1
Sauté Onions and Garlic in lots of extra virgin olive oil
Step 2
Boil Heavily Salted Water
Step 3
Break Down Broccoli into florets
Step 4
Chop the Broccoli Stalk into small pieces
Step 5
Add Broccoli and Stalk to water and cook until Fork Tender
Step 6
Drain Broccoli after cooked, reserving the cooking water in a separate bowl
Step 7
Add onions, garlic, cashews, parmesan cheese, black pepper, and lemon to the pot together with the broccoli
Step 8
Add half of the broccoli water to the pot and blend everything together with an immersion blender
Step 9
Add more salt and more of the cooking water to the soup in order to reach desired consistency
Step 10
Serve with some crushed cashews and grated parmesan cheese on top
