Step 1
Start by soaking dried kelp in water for 30 minutes to create a light kombu dashi.
Step 2
While waiting, cut silken tofu into 6-8 large cubes.
Step 3
Mix together sesame paste, soy sauce, water, chili oil, rice vinegar, and sugar in a small food processor until combined. (You can also mix by hand.)
Step 4
Once kombu has rehydrated, heat the pot over medium until almost boiling. Reduce heat to low, remove kombu (save it for kombu tsukudani if desired), add the tofu, and sprinkle salt into the broth.
Step 5
Simmer until tofu is warmed through.
Step 6
Transfer tofu pieces to serving bowls using a slotted spoon. Top with sesame sauce and sprinkle with finely chopped green onions. Serve and enjoy!
